Typical of the South-East of France and Provence, aioli is a dish composed of boiled vegetables and fish. Everything is dipped in a creamy mayonnaise sauce flavored with garlic, which gave its name to the aioli sauce. Generally, we use a white fish like cod, often accompanied by hard-boiled eggs. Choose fresh, seasonal vegetables: cauliflower, potatoes, carrots, green beans. With aioli, the fish and vegetable recipe becomes indulgent and tasty.
