How are our Calissons d'Aix made?
Made according to a traditional and artisanal method by our Calissonnier , our Calissons d'Aix-en-Provence reflect the know-how of Maison Parli , perpetuated since 1874.
We choose our ingredients for their high quality, and take care to make our Calissons dough by grinding and mixing whole almonds, candied melon "to heart" and candied orange peel under old granite rollers which allow retain its exceptional texture and flavor.
